Kentucky Wonder is a productive pole bean with fleshy, medium-green pods.
Kentucky Wonder is a productive pole bean with fleshy, medium-green pods. Pick them around 6 inches long for tender texture. The plant climbs, so provide a trellis about 6 feet tall before vines begin running. This keeps the crop off the ground and gives you a clear place to find pods. It has rust resistance, useful in humid gardens. Expect about 66 days to harvest under suitable growing conditions.
Beans need warm soil to germinate reliably. Sow after the bed has warmed, planting seed 1 to 1½ inches deep. Sow one seed every 4 inches along a trellis. Keep rows 36 inches apart and leave a clear path beside the trellis for picking and tending. Choose full sun and soil that drains. Water after sowing, then keep it evenly moist while seedlings emerge.
Guide young vines to the support while they are short. Once they catch, they will climb on their own. Check both sides of the trellis as pods form; mature beans can hide among leaves. Harvest while pods are about 6 inches long and still fleshy. Use snips or hold the vine steady as you pick so you do not pull down tender stems. Frequent picking keeps the row productive and helps catch pods before they become tough.
The pods are fleshy and distinctly flavored, so they hold up well in a simple skillet side. Trim the ends, cut them into short lengths, and cook until just tender. Add them to soups or casseroles near the end so the texture remains firm. For a fuller plate, serve with corn bread or rice and a spoonful of tomato relish. The roughly six-inch harvest size keeps the pieces compact enough to cook evenly. To preserve a surplus, blanch the pods briefly, cool and drain them, then pack for the freezer.
